In the last 15 years I have been lucky enough to be at the forefront of veganism and the vegan food movement! Let me tell you though, it wasn’t always creamy nut cheeses and beyond meat burgers!
I was in my early 20’s and not only did none of the traditional pizza places offer vegan cheese, but you could not even get almond milk or coconut milk yogurt at any grocery stores. Imagine a world without vegan options. The lack of options was in fact one of the driving forces that helped me to hone my skills!
In 2011 I was tasked with the opportunity of working with the Windsor Arms hotel in Toronto. The Windsor Arms is a beautiful boutique hotel that plays host to a who’s who in the city, especially during The Toronto International Film Festival!
As more of the hotel’s guests began asking for vegan options, and the chefs at the hotel knew nothing about vegan cuisine, I came on board to help write some menus, and work with the team in a hands-on role to execute the menus and teach them. Together we worked on a dinner menu, room service menu and Sunday brunch menu. Within a matter of weeks, we had a 100-seat steakhouse FILLED with diners each and every weekend! I was lucky enough at that time to work on a vegan party for tommy Hilfiger and Elisha Cuthbert, pretty cool!
In 2012 I was tasked with working with a 5-star resort, Taboo. I worked with a team of 50 or so staff to help implement vegan menus across all outlets in the resort; room service, fine dining, boathouse, a pool bar menu and more! Even back in 2012, a large number of sales wound up being from the vegan menus!
In the last several years I have been lucky enough to work with many other brands, some of which are public, but many are private and just needed help with existing menus. It has always been my pleasure to do my best and lead by example to show people how amazing this food can be!
